It is the primary responsibility of the Cook to perform basic cooking procedures, prepare food for presentation, and operate a specific station with others or independently. All duties are to be performed in accordance with departmental and Mandalay Bay policies, practices and procedures.
Specific Job Functions:
Follows the methods of food preparation and cooking, sizes of portions, mixing of sauces and garnishing of foods to ensure food is prepared in prescribed manner as prescribed by the Chef De Cuisine.
Sets up workstation based on pars established by Chef De Cuisine and by following station set-up sheets. Operates a specific station with others or individually
Tests cooked foods by tasting and smelling them.
Drives the Customer Relations Management system by ensuring that all such orders are handled correctly.
Complies with occupational, health and safety standards. Ensures foods are stored and kept at proper holding temperatures, through the use of thermometers.
Attends regularly scheduled staff meetings.
Completes all closing requirements as directed by Chef De Cuisine.
Performs other job related duties as assigned.
Job Requirements:
An Associate’s Degree in F&B and/or course certification from an accredited Culinary Institute is preferred.
Two (2) years of fine dining and/or hotel/casino experience preferred.
Excellent knowledge of basic kitchen equipment, the ability to read, translate and execute recipes, and knowledge of advanced cooking techniques is required.
Must posses a full knife set and excellent knife skills (cut, dice, mince and slice).
Extensive overall knowledge of Food and Beverage preparation and presentation.
Must possess excellent interpersonal service skills, along with organization skills to plan time effectively.
Must possess the ability to access all areas of the restaurant, withstand prolonged standing, stretching, bending, kneeling, lifting and carrying items weighing up to 50 lbs. without restriction.
Work in close quarters or small rooms and is occasionally exposed to hot, cold, wet and/or humid conditions and work environmental factors, including noise, dust, and smoke.
Ability to obtain a valid Health Card.
Maintain a professional, neat and well-groomed appearance, adhering to Mandalay Bay standards.
Must be able to communicate effectively in English, in both written and oral forms.
Must have interpersonal skills to deal effectively with all business contacts.
Work varied shifts, including weekends and holidays.
High School diploma or equivalent is required.
Proof of eligibility to work in the United States.
